Greetings, fellow enthusiasts of the grape! Today, we embark on an exciting voyage through the realm of bubbles, where Prosecco and Champagne take center stage.
🍇 The Grape Tales: Unraveling the Origins
Prosecco: Hailing from the lush vineyards of northeastern Italy, Prosecco is an emblem of Italian merriment. Crafted predominantly from the Glera grape, its playful and vibrant character epitomizes la dolce vita.
Champagne: Champagne, a French marvel, emerges from the hallowed soils of the Champagne region. Drawing its exquisite flavors from Chardonnay, Pinot Noir, and Pinot Meunier grapes, it’s synonymous with celebrations and opulence.
🍷 Tip: Prosecco leans towards fruitiness and freshness, while Champagne often showcases complex toasty and biscuity notes.
🥂 How is Prosecco different than Champagne?
Prosecco: Known for its lighter and frolicsome bubbles, Prosecco dances gracefully on the palate, offering a burst of orchard fruits and floral aromas. It’s like a lively Italian soirée captured in a glass.
Champagne: Champagne’s bubbles exude refinement and finesse, with a more restrained effervescence. Its layers of flavors unveil a symphony of brioche, citrus, and mineral undertones, reminiscent of a sophisticated Parisian affair.
🍷 Tip: Seek Prosecco for an approachable and joyful sip, and Champagne for a more intricate and elegant experience.
🥂 A Question of Occasion: When to Choose What
Prosecco: Are you aiming to elevate a casual gathering or light-hearted brunch? Prosecco is your vivacious confidant, ready to infuse any moment with Italian exuberance. It’s the essence of affordable indulgence.
Champagne: Reserved for significant milestones and grand celebrations, Champagne exudes a sense of prestige and luxury. A pop of a Champagne cork signifies life’s exquisite triumphs.
🍷 Tip: Prosecco graces everyday occasions with charm, while Champagne crowns exceptional moments with unparalleled elegance.
🥂 Is Prosecco just cheap Champagne?
Now, the million-dollar question: which to choose? Here’s the secret: Prosecco isn’t just a second fiddle to Champagne; it’s a star in its own right. Its accessible price point, refreshing character, and versatility make it an exceptional choice for revelers and connoisseurs alike.
So, whether you’re raising a toast to a casual sunset or commemorating a milestone, let the vivacious allure of Prosecco be your partner in celebration!

Extra Dry
The term Extra Dry reveals a type of Prosecco which is softer than Prosecco Brut because of second fermentation’s length, which gives it a higher residual sugar and greater sweetness. Prosecco Biologico Staffilo contains 14.00 g/l of sugar; the residue gives a greater sparkle and a more delicate taste to the palate. Prosecco Extra Dry is characterised by a delicate balance made possible by its fine perlage, its taste tending towards sweet with light floral notes and its straw colour. By the nature of its intense taste, the recommended combinations are delicate foods such as white meats, fresh cheeses and fried fish.

Millesimato
The term ``Millesimato`` is given to Prosecco, through precise production rules, when it is obtained with 85% of grapes from a single vintage; this feature guarantees a higher level of quality with positive repercussions on taste and visual impact. An example of this is Staffilo, an organic Prosecco DOC millesimato, obtained only from the best grapes of the current year; the use of grapes' blend from different years would compromise the possibility of enjoying the typical organoleptic properties of our Prosecco.

Organic Prosecco
Staffilo is a Prosecco DOC made from 100% organically grown grapes. The application of the organic method, through the abolition of pesticides and techniques such as partial cold concentration, helps to maintain the natural balance of the environment and gives the taste softness, harmony and freshness.
